“Truth. Kin has one of the best ramen’s in town. The broth is boiled for 8 hrs with different bones. The egg is imported from Japan and perfectly poached with a yolk like soft cake, and the egg white is silk like dofu.

They’re also the only place where you can read store-supplied Wax Poetics while slurping down your ramen and doing work on the free Wifi. Basically, Kin is my ish and they’re offering 20% off until September 30th. Please take advantage of it!”

Phat in Shanghai: Kappo Yu

I am a huge fan of Oyama, so I was very excited when I heard that they were opening another restaurant, called Kappo Yu. Kappo Yu is located on a quiet street in the French Concession and serves an elegant kaiseki omakase. Kaiseki ryoori is the haute cuisine of Japan – seasonal ingredients are carefully selected and expertly prepared to best bring out their natural flavors. The dishes are then arranged beautifully and served in small portions. During a typical kaiseki meal, diners can expert to sample a variety of dishes with contrasting flavors and textures – raw sashimi, acidic pickles, a piping hot soup with plenty of umami.

We started our omakase with a rich flavorful soup made with highly sought-after matsutake mushrooms from Yunnan. The mushrooms were so flavorful, I think this was my favorite dish of the night.

The uni at Oyama is the stuff dreams are made of, so I was really excited when I saw it on the menu at Kappo Yu. Unfortunately it was part of the worst dish of the night. Covered in a tomato-scented goo, the rich flavor of the uni was lost altogether.

At Oyama, every bite is agonizingly delicious, and I feel like I need to carefully commit each flavor to memory. Only a few things on Kappo Yu’s menu really jumped out at me in the same way. Being a larger establishment, Kappo Yu also lacks the attentiveness and personal touch that Oyama’s 12 seater is so widely known for. If I had to to save up my kuai for one meal – I think I’d go with Oyama.

Phat in Shanghai: Ponchiki

Ponchiki is a Russian pirogi and donut shop that opened up at Changle Lu & Xiangyang Lu. After reading about them on City Weekend, I stopped by the other day to sample their goods.

Ponchiki offers one kind of donut ($3RMB), which is served up with your choice of honey, condensed milk, or chocolate sauce and then dusted with powdered sugar. The donut is on chewy and tough side, and takes a good pair of chompers to get through the whole thing.

Ponchiki also makes pirogis, which unlike their doughy Polish counterparts, feature various fillings stuffed in a soft dinner roll type bread. The potato and bacon pirogi ($4) was soft and yummy, and reminded me of the buns you get in Hong Kong bakeries.

We also tried the apple blintz – some chopped apples wrapped in a thin crepe. It was a little dry, definitely could have used some cream or cheese to moisten it up. But not bad for $3RMB.

There are a lot of other little shops around the intersection of Xiangyang & Changle – steamed bun shops, noodle shops, and my favorite – pancakes cooked on a griddle and stuffed with Chinese garlic chives or scallions ($1.20 RMB). Do try to get them when they are hot and fresh – or else they become stale.

Phat in Shanghai: Chambar Belgian Bistro

After reading the reviews on SmartShanghai, I was a little hesistant to try Chambar. The reviews totally ripped the restaurant to shreds – which might explain why on Tuesday night, we were the only table in the house. I think the management took note because our menus featured lower prices and more generous portions than those described in the reviews. Chambar a cute little restaurant tucked away on the quaint Xing’An Lu, just a block south of Huaihai. The decor looks like everything is dyed to match, but nonetheless it does a good job of conveying that Alpine country cottage kind of feel.

We were a table of four, and ended up ordering 3 servings of the large mussels ($198). We tried them three different ways – with white wine, cooked in Hoegaarden, and with garlic and cream. All three preparations were pretty tasty, and cooked with a generous amount of aromatics. The wine and Hoegaarden varieties were a bit on the salty side, so get the cream-based one if you are a chronic bread-mopper like myself. I once had mussels imported from Holland, and since then I’ve been under the impression that all European mussels are as huge and meaty as these ones. But I guess in Belgium, its a little different. The mussels we had ranged from medium to tiny, but were exceptionally fresh. Each order of mussels comes with a small side of fries – thick wedges fried until crispy and seasoned generously. Can’t say they are the most authentic, most addictive Belgian frites I’ve ever had, they were just average. With the addition of an authentic Belgian beer and some bread, we left the place stuffed. The bill came to about $160/head which I thought wasn’t too bad at all.

If you’re in the mood for mussels or looking for a good Belgian beer, do give Chambar a try.

Phat in Shanghai: Simon’s Kitchen

I can never say no to trying a new xiao long bao spot. I heard about a place called Simon’s Test Kitchen, where Chef Zhao (formerly of Ding Tai Fung) mans the steamers. With such great experience under his belt, I had high expectations for Simon’s.

Simon’s is situated in a cluster of new businesses in northern Jing’An – some Hong Kong style restaurants, and funny looking cake storefront. Walk past Simon’s open kitchen and check out the chef masterfully wrapping dumplings before taking a seat upstairs in their bright and comfortable dining room.

Simon’s menu closely resembles that of Ding Tai Fung, but with one major difference – the price! Everything is extremely affordable. We started our meal with an order of the drunken chicken in Shaoxing wine ($28RMB). The chicken was flavorful and tender, but poorly butchered, with shards of bone making the dish difficult to eat. Next up we had the signature braised beef noodle with tomato ($22RMB) – absolutely wonderful! The broth was a bit oily, but fragrant and rich. The noodles were accompanied by chunks of fork-tender brisket and tendon. Definitely try this at Simon’s, you’ll be glad you did!

But of course, what we really came to Simon’s to try was the soup dumplings. In addition to your classic pork and crab roe + pork, Simon’s also lets you get creative. You can pick a filling (mushroom, Sichuan mala spicy pork, chicken, and sweet red bean amongst others) and the wrapper it comes in (plain, or wrappers infused with fresh-pressed beet, spinach, or carrot juice). We decided on a steamer of the hairy crab roe + pork ($29RMB for 10 pcs) and a steamer of the pork in a spinach wrapper ($21RMB for 10 pcs).

Simon’s xiao long bao are really good. Like at Ding Tai Fung, the wrapper is unbelievably thin, slightly chewy, and folded into a multitude of neat little pleats at the top. One nibble and the perfect amount of hot, flavorful soup comes gushing out. But unlike DTF, the hairy crab roe + pork buns are full of crab flavor, and the price is a steal!

But of course, the true test of a masterfully created xlb is the original pork dumpling. It should be flavorful, full of soup, a good mince, and have a strong but delicate wrapper. Simon’s pork xlb are pretty good – thin wrapper, lots of soup inside, but the texture of the pork is not quite right. Instead of being springy and resilient, the pork is minced too finely, resulting in an almost crumbly, grainy texture. The spinach wrapper was a fun addition, but don’t expect to taste the juice.

Although I still think the soup dumplings at LLF are unmatched, I’m happy to add Simon’s to my ever-growing list of xlb spots. It’s a great alternative to DTF when you have guests in town, or if you want to enjoy a basket of xlb in a comfortable atmosphere instead of perched on sticky stool at LLF.

Simon’s also delivers! I’ve got my whole office ordering from them now; the braised beef tomato noodle + sauteed spinach makes a great lunch.

Phat in Shanghai: House of Flour

I had heard great things about House of Flour (HoF) from Shau Ru and was dying to check it out. Although I do prefer Asian desserts to western ones, it had been a minute since I had a great slice of chocolate cake. After a great meal at the newly-opened Mistral, I found that I still had room for dessert and jumped in a cab to HoF.

The chocolate-orange mud cake sounded absolutely irresistible, so we ordered a slice a la mode. It definitely lived up to its reputation – the cake was incredibly moist, dense, and spiked with orange fragrance.

Being the overly-indulgent eaters that we are, we also tried out the creamy hot chocolate. It had a silky smooth texture and was full-bodied and rich in flavor. Definitely the perfect dessert for chocolate-lovers.

HoF is open until midnight or later, so it’s a great place to catch a late night treat.

Phat in Shanghai: Mistral

Mistral is a new Spanish tapas restaurant that just opened up on Fuxing Lu, in a space that used to be occupied by Marrakesh. It’s owned by the same people who make the quality cocktails at Tara 57. The whitewashed interiors are simple and elegant, and I was pleased that we had snagged a table on their lovely terrace. Unfortunately, Mistral’s only menu is written on a blackboard on the first floor in Spanish. So if you are upstairs, make sure you order your dinner before being seated to avoid that extra trip. I thought this blackboard ordering system was a notch above Franck’s on the pretentiousness scale, but after conversing with the charming and knowledgeable chef, I thought maybe this isn’t so bad. Still, Mistral could think of way to keep their “Spanish-style” menu intact without having to greatly inconvenience their diners.

After we ordered, we headed back upstairs and enjoyed the warm Shanghai evening on the terrace. Our first tapas dish came – three small balls of goat cheese, drizzled with honey and served with a bit of carmelized onion. The goat cheese was absolutely delicious – creamy, rich, robust, and perfectly complimented by the sweetness of the honey and the onions. My only complaint was that at $60RMB for a 2 person portion, they could have thrown and extra ball of cheese on the plate. How are 2 people supposed to split 3 tiny balls of cheese anyways?

We also went for the codfish with raspberry aioli. The creamy, slightly sweet and tangy raspberry sauce was a great accompaniment to the white fish. Delicious, but the 2 person order clocked in at $75RMB. Order wisely.

I absolutely love mussels, so I couldn’t resist ordering the mussels with shiitake in saffron cream ($45RMB). I had imagined that they would be in the shell, so I was a bit disappointed when the dish arrived bearing the equivalent of 2 whole mussels – chopped! Nonetheless, the mussels and shiitake were fantastic, the sauce was creamy, earthy, and flavorful.

After the three tapas came and went, I was still desperately hungry and praying that our 2 person paella ($150RMB) would be portioned a little more generously. Luckily it was. The paella arrived on our table piping hot and was studded with squid, clams, and mussels. The rice was cooked perfectly, and came with a dish of raspberry sauce on the side. The paella was fragrant and delicious, but it did have small chunks of uncooked garlic throughout, making date night a little less fun…

Mistral is a great new addition to the French Concession. Even though the meal wasn’t perfect and there were several service hiccups (the table next to us repeatedly asked for their tortilla espanola – it was delivered to our table, not theirs, ten minutes later), I think Mistral has a good thing going on. The chef is obviously talented and his kitchen is churning out near-perfect dishes. With a lowered price point (both tapas and wine) and more staff training, I think Mistral could become a neighborhood gem.

Phat in Shanghai: Brasa Chicken

What to do when your sink is full of dirty dishes and your ayi doesn’t come until tomorrow? Order delivery! I had been meaning to try Brasa Chicken for awhile. It’s another Vargas concept and I had been hearing good things. Rotisserie chicken in a city of no ovens – pretty smart idea. So I picked up the phone and ordered a while chicken with a side of roasted potatoes. The prices aren’t bad at all – the whole meal only cost us $90RMB and there was plenty of chicken leftover. Thirty minutes later a knock at the door signaled that our dinner had arrived.

Brasa’s chicken is not bad. But not that great either.. on a whole its just.. mediocre. When I picture roasted chicken, I imagine a bird that has been turning on a spit, cooking in its own juices until the meat is so tender that it just falls off the bone. Brasa’s chicken is a little undercooked, so there is no falling-off-the-bone action at all. Worse yet, their roasted potatoes were completely RAW on the inside.

The two sauces that come on the side are a nice touch, but could not save the bird. You can pick from either a green sauce (a chimichurri?) and a smokey red sauce, I passed on both and pulled out a bottle of BBQ sauce Adrian had brought me from Texas. Much better.

Would I order again? Probably not.

Phat in Shanghai: Crawfish Boil

Happy Summer Equinox! Today marks the very first day of summer – and summer in Shanghai means plenty of yang mei berries (杨梅), hot sweaty bike rides, and lots and lots of crawfish, aka xiao long xia (小龙虾). I consider myself an adventurous eater, but the unrefrigerated, oily crawdads peddled on Shouning Lu might just be a little TOO adventurous for me. Luckily, our friend Mark invited us along for an annual Southern-style crawfish boil taking place at Cuvee Kaiba in Jing’an. I had been looking forward to this for an entire week!

Our gracious and generous host, Jason, is a boy from down south who boils up his crawfish with plenty of lemons, potatoes, corn, and spices galore. His crawfish boil was done Louisiana style, meaning the whole pot is dumped on a long table for the hungry masses to share.

Jason’s crawfish were exceptionally clean – nothing but tasty goodness inside those heads. I dug in with much gusto, resulting in lips numb from the spice!

Phat in Shanghai: Simply Thai with Diningsecretary.com

The lovely folks at diningsecretary.com invited me and some other bloggers for a delicious lunch at Simply Thai in Xintiandi. If you haven’t heard of them before, Dining Secretary provides restaurant recommendations on their website and a reservation service which can be reached by dialing (86-21)5757 5777 (in Chinese, this sounds like I eat, I eat, I eat eat eat!) Reserve with them and they’ll send you a confirmation by text message which you can easily pass along to your dining companions. Clever!

I had never been to Simply Thai before so I was looking forward to it. We started with a huge appetizer sampler that included some skewers and fresh rice paper rolls, all very delicious. My favorite appetizer was the soft shell crab salad. The salad came with a generous portion of deep fried crab, which was tossed with some greens in a sweet and tangy dressing. More crab > greens = delicious!

Simply Thai’s tom yum was the perfect combination of spicy and sour. I especially liked the nice, fat, perfectly-cooked prawn that came floating in my soup.

The mussels with chili paste were my hands-down favorite. By the end of the meal a heap of mussel shells had accumulated on my plate. Couldn’t help myself – the mussels were so fresh and meaty. Definitely get this dish.

The fried crispy fish with mango in tamarind sauce was another great main course dish. The crispy texture of the fish was paired perfectly with the tender mango coated in sesame seeds – a winning combo which worked well with the sweet and salty tamarind sauce.

Even though I was stuffed, I couldn’t help but completely demolish my dessert plate, which featured sago & coconut pudding with fresh fruit. A soft chewy layer of sago was studded with corn kernels was topped with coconut pudding – the perfect sweet treat to wrap up lunch.
